Preheat your oven to 200°C (400°F) and line a large baking sheet with parchment paper.
Roll out the puff pastry sheet on a clean surface and slice it into thin, even strips about 5 mm wide.
Wrap the pastry strips around each sausage like mummy bandages, leaving a small gap near the top for the face.
Place the wrapped sausages onto the baking sheet. Lightly beat the egg and brush over the pastry dough.
Bake in the oven for 15–18 minutes until the pastry is puffed and golden brown.
Let cool slightly, then dab tiny dots of mustard onto the exposed sausage area to form eyes. Serve with ketchup.
